If you’ve ever eaten spring mix salad, you’ve probably noticed a green leaf with a peppery flavor. Say hello to arugula (or as it is known in Europe, roquette).

Closely related to mustard greens, arugula is a member of the cruciferous family of vegetables, well known for their cancer-fighting health benefits.

When buying arugula choose deep green, dry, unblemished leaves that aren’t wilted or torn. The smaller the leaf, the milder the flavor. Although bagged arugula is available all year round, it is best fresh and in season in the spring
Store arugula loosely in a sealed plastic bag in the refrigerator only 1-2 days.
